Happy Herbivore Light & Lean (+Giveaway)


I believe this is Lindsay’s fourth book. I loved all of her previous books because the recipes are not complicated and do not require all day to create them.

This book is focused on recipes that are low in calorie yet high in nutrition. There is also a workout plan, which is a bonus:)

I was also lucky enough to ask some questions to the chef herself!

Q. Hi Lindsay! Where do you get your recipe inspirations from?
A:  It’s a mixed bag. Sometimes I’ll pick up an ingredient and figure out a way to make something with it. Other times I’ll see something and want to recreate it at home. For example, when I was in Ireland I saw signs all over the place for Guinness stew or Irish stew. Of course it wasn’t vegan, or vegetarian, so I waited until I got home, learned about the traditional recipe, then made a plant-based version… and now it’s in Light & Lean!

Q: Did you grow up being vegan?
A: Nope

Q: What do you do when you are at a restaurant that does not accommodate any vegan meals or your lifestyle? For me, it gets a bit awkward to just watch others eat and not eat anything myself.
A: his has never happened to me — there is always something to eat, even if it’s just a salad and a baked potato. I’ve been all over the globe. Even in really rural areas, there was still something. Might not be terribly exciting, but a bowl of fruit counts:)

Q: What is your favorite recipe?
A: Asking a chef to pick their favorite recipe is like asking a parent to pick their favorite child:)

Here is one of the recipes from the book. This one is called Spinach Love Wrap.

Spinach Love Wrap
Makes 2
Soy-free, Gluten-free, Quick, Budget

This is another wrap inspired by the 7-Day Meal Plans. I call this a spinach “love” wrap because of the strawberry “hearts.” Plus it’s so easy to make, it’s only 159 calories per wrap, and its really filling. What’s not to love?

2 c spinach
1 tomato, sliced
1 roasted red bell pepper (in water, not oil), sliced
8 strawberries, sliced
2 wraps

Place spinach, tomato slices, bell pepper slices, and strawberry slices in each wrap and roll up.2

Chef’s Note: For a twist, sometimes I leave off the bell pepper, add in some white beans, and drizzle a little balsamic vinegar or fat-free balsamic vinaigrette over the vegetables.

As you can see, one serving is under 200 calories but the fiber and protein contents are high at 6.7g and 4.9g. This can be a great snack or paired with a side dish for a healthy meal. I would even suggest swapping out the wrap for a collard green or seaweed to make this gluten-free.
